SIGNATURE DEVILED EGGS

Deviled eggs are always a favorite at my gatherings.  While labor intensive, they are worth the effort.  The hardest part for me is getting the shells to peel with ease.  I find this works best with the Instant Pot “5-5-5 method”. Google this method to find easy instructions.

  • 12 eggs (older eggs seem to peel easier)

  • 1/3 cup Dukes Mayonnaise

  • 2 tsp Dijon Mustard

  • Kosher Salt

  • Black Pepper

  • Paprika

Steps

Prepare hard boiled eggs using your preferred method (Instant Pot or stove method). Once eggs are done, peel eggs.

 

Cut eggs in half lengthwise and remove hard yolk and place in mixing bowl. Place the egg whites in a container made to hold deviled eggs.

 

Add mayo, mustard, and salt/pepper to taste to the hard yolks. Use a fork to mash together until all is blended.

 

Use a spoon to scoop and fill egg whites with the yolk mixture.  If you want to be fancy, you can use a piping bag (I use a spoon for ease and time).

 

If desired, sprinkle with paprika.  I always leave a few without the paprika for the kids. Keep refrigerated until ready to serve.
